      How do I create an item in the gradebook that is not associated with an assignment or test?

      You cannot simply create a column in gradebook, all gradebook entries begin from assignments, quizzes or graded discussion board posts.  Canvas allows you to create an assignment that does not require them to submit it through Canvas.
